On the Ölberg in Klosterneuburg, state opera singer Herwig Pecoraro and his family produce aceto balsamico - one of the best in the world. Following strict Modenese tradition, the balsamic vinegar is produced using an ancient process that the tenor learned while studying singing in Modena.
The Aceto Balsamico matures in five different barrels: Oak, acacia, mulberry, chestnut and cherry blend together after 9 years to create this wonderful gourmet favorite.
Crowned with countless prizes and awards, Acetaia Pecoraro is a small family business that places great value on quality and authenticity. True to the "slow food" motto, the balsamic vinegar matures slowly and is made from purely organically grown, regional products and produced by hand.
